The combination of flour and water is a fascinating thing. With small additions you can take such simple ingredients and make them marvellous. Then, just a small change in technique, you'll completely transform them. In this private virtual cooking class, you will learn the art of working with batter in different forms. This knowledge will open your mind and pantry to simplicity and teach you how to become creative with what you often have on hand.
Ancient in origin, the word, “pancake,” seems to have first appeared in the 13th century and by the 18th century, pancake recipes were in every American cookbook. There are approximately 70 variations of pancakes around the world, some sweet and others savory.
Interestingly, pancakes were and still are associated with religious holidays. Prepared on Shrove Tuesday (commonly called “Pancake Tuesday”) in anticipation of Ash Wednesday, in other countries they’re used to celebrate renewal and good fortune. In England, every year since 1445, there’s a pancake race on Shrove Tuesday, where participants flip pancakes in a frying pan as they run from the town square to the church!
Chef Ted, video calling into your kitchen live from New England, will teach about the various ways of working with these simple ingredients and together you'll transform them into 18th Century crepe style pancakes, Goat Cheese and Chive Beggars Purses, and Bacon and Corn Cakes. This class is a wonderful exploration into a huge new world.

Featured in Esquire; Discovery Channel, Great Chefs of the East; Condé Nast Traveller; and in Food & Wine as owner of one of the Top 25 Restaurants in the US.
Ted Fondulas started his restaurant career at age five--frying baloney and cooking minute rice on the radiator! After these early years hanging out in the kitchens of his grandmother and restaurateur grandfather, Ted pursued a literature career. After trips to Europe wandering through some grand kitchens in France and Italy, his interest in food is reignited. He then works in New York and California hotels and restaurants, eventually settling in New England as part of the back-to-the-land movement in the early seventies.
In 1982, Ted and his wife, Linda, opened Hemingway’s Restaurant in Killington, Vermont, eventually receiving critical acclaim. Chef Ted’s trailblazing dedication to using local ingredients paves the road for Vermont’s eventual farm-to-table movement. In addition to receiving Four-Star and Four-Diamond travel guide honors for many consecutive (a boatload of?) years, the Robert Mondavi Culinary Award of Excellence is presented to Chef Ted, who is among other culinary luminaries, including Charlie Trotter, Thomas Keller, Todd English, and Daniel Boulud.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
