Calling all rib lovers, this class will be a delight and perhaps a surprise! Known for their incredible meats, transport to Brazil to learn how to make an amazing rack of ribs along with a traditional dry rub. The surprise will likely be Feijão Tropeiro, also known as Trooper's Beans.
Feijão Tropeiro is one of the most iconic dishes coming from Minas Gerais. Minas Gerais is the second most populous state in Brazil, filled with colonial-era towns and known for it's rich minerals and gold rush. The story goes... in the colonial times, troopers, or troops of cattlemen, would travel long distances and have very hard work. With them, they needed to carry nutritious and filling food to keep their energy levels high. In comes Feijão Tropeiro, comfort food at it's finest, and all in one pot. Beans, kale, sausage, bacon, aromatics, manioc (you'll learn more about this in your class) and eggs - this is perhaps the one pot meal of all one pot meals.

Meet The Chef
Chef Renato

Chef Renato was born and raised in Rio de Janeiro. He holds a Bachelor’s degree in Biology, as well as an MBA and a Master’s in Biophysics, all from UFRJ. From 2001, he spent 12 years traveling across Brazil while working for the government, where he developed a deep love for regional Brazilian cuisines and the art of cooking.
Driven by his passion, Chef Renato pursued culinary training at the prestigious Institute of Culinary Education in New York City, where he graduated from the Culinary Arts program. He then gained experience working in restaurants in Rio de Janeiro and sought culinary inspiration both across Brazil and abroad, including a stint as a private chef in Spain. His travels, particularly his time in Spain, deepened his appreciation for tapas, which he brought back to Brazil.
Upon returning to Brazil, Chef Renato opened his own restaurants and culinary experiences. He now resides in Tiradentes, MG, one of Brazil’s most influential culinary centers, where he owns and operates Dona Xica, a restaurant serving traditional local Brazilian food. He also offers in-person cooking classes, sharing his approach: “Quality ingredients and simple techniques never go wrong.”

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
