Join Us For an Adventure in Pappardelle Pasta-Making

Get ready for a culinary adventure with Chef Massimo, joining you live from his home in Italy, as he guides you through the art of pasta-making and the flavors of traditional Italian cuisine. The centerpiece of the class is learning to craft delicate pappardelle from scratch, blending fine 00 flour with semolina to achieve the perfect texture. Under Chef Massimo's expert guidance, you knead and roll the dough, discovering the rich history behind this loved pasta shape, known for its wide ribbons that soak up sauces beautifully. Once your pappardelle is ready, you'll finish it off by preparing a luscious mushroom and sausage sauce, simmered with aromatic herbs. The smells of freshly made pappardelle with hearty sausage and earthy mushrooms will fill your kitchen, transporting you to the rustic trattorias of Italy. 


In addition to pasta-making, Chef Massimo will introduce you to a refreshing twist on the classic Caprese salad, incorporating grilled eggplant to add a smoky depth to the traditional combination of fresh tomatoes, creamy mozzarella, and fragrant basil. As you assemble the vibrant dish, Chef Massimo will share anecdotes from his culinary heritage. Over laughter and shared stories, you'll cook together while enjoying your mutual passion for delicious food.

Chef at restaurants throughout the world. Graduate of ALMA University.

Born and raised in Brindisi, Puglia Chef Massimo Mancarella discovered his passion for food while watching his grandmother Anna prepare the classic Sunday family lunch. After learning the basic techniques of Italian cuisine at the hospitality institute in his city, Massimo had the opportunity to travel the world. He’s perfected his craft with over 10 years working as a Chef in Egypt, the Netherlands and Spain which have contributed to his love of culture, people and his culinary knowledge.


Chef Massimo’s desire to deeply explore the history and culture of Italian cuisine led him to the prestigious ALMA University. ALMA University, located in the prized culinary region of Parma, Italy houses Italy's most elite culinary professions. It was there where he developed the deepest knowledge, learned the stories and the soul of Italian cuisine. After working in several Michelin Star restaurants, Massimo returned to his homeland, Puglia where he currently works as a private Chef for events and in luxury villas.


“Fill the head before the stomach” is his culinary philosophy: A dish, an ingredient and a recipe almost always have a story to tell. It’s the anecdote and legend that we together will carry together.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
