Food tells a story of history, culture and tradition, and Sicily is one of the shining examples of tracing history and food. The largest island in the Mediterranean Sea also has a fascinating past which can be savoured in its cuisine. Even today, if you ask a person in Sicily about their heritage - they will answer Sicilian, not Italian. While the food of this island has much in common with the rest of Italy, there's a noticeable difference with Greek, Spanish and Arab influence. As you tour around the island and explore the chaotic markets in Palermo and Catania, you'll see heaps of locally grown produce - eggplant, zucchini, olives, capers and legumes like chickpeas - all made possible by fertile volcanic soil. You'll see an abundance of citrus fruit and unique fruits including the native blood orange, Tarroco, that can't be exported and are only found on this island. You'll see loads of nuts and dried fruits that nod to their Arab influence.
This Sicilian cooking class pays tribute to some of this destinations most famous dishes. First, you'll start with the loved Pasta alla Norma. This simple dish is technically challenging with a lesson in perfectly fried eggplant. Then you'll explore sweet and salty Caponata. Eggplant, peppers, olives, raisins and pine nuts come together in a side dish or appetizer that embodies the spirit of this island. Finally, you'll explore another island off the coast of Sicily - Pantelleria. This delightful place, part of the Strait of Sicily, is only 60 kilometers from Tunisia. A simple salad of potatoes, tomatoes and olives - the fresh flavors, we believe, will become one of your summer staples.

Bari, Italy
Michelin star restaurant chef having worked for Michelin restaurants in over 5 cities, graduated top of class from ALMA University
Chef Carlotta Martinelli lives in the south of Italy in the town of Bari. She began cooking at a young age with her nonna and fell in love with the rich traditions of pasta-making on the streets of her historic town. Since then, she graduated top of her class from what's consider the world's most prestigious Italian culinary university - ALMA, the International School of Italian Cuisine located in Parma, Italy.
This whiz-kid, went on to work for several Michelin Star chefs in Rimini, Padua, Milan, Rome, London - and her native region, Puglia. She was most recently responsible for all seafood at the famed Due Camini. After 4 years of working towards the prized Michelin Star, they won it in 2018.
Carlotta believes food is a passport of which, you can travel the world. She's excited to bring you to her hometown of Bari, Italy in her cooking classes with The Chef & The Dish.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
