Tomato Tartare is a beautiful way to use up fresh summer tomatoes. This savoury and summery Spanish delight is a great way to kick off a dinner party. It's fresh but quite hearty with the addition of sun-dried tomatoes and Worcestershire. Add some crusty bread and dig in!
Tomato Tartare
Makes 2-4 Servings
2 large Tomatoes, diced
3 Sun Dried Tomatoes, chopped
1/2 Green Onion, chopped
100 g thinly sliced Ibérico or Serrano Ham, finely chopped
2 Tbsp Sweet or Dijon Mustard
1 Tbsp Worcestershire Sauce
2 Tbsp Extra Virgin Olive Oil
Salt & Pepper to taste
In a bowl, mix both tomatoes, green onion, and ham. Season to taste with salt & pepper. Add mustard, Worcestershire sauce and oil to the bowl with the tomato mixture and mix. For presentation, place a mould on a plate and fill with the tomato tartare, top with chopped green onions. on a plate sprinkled with chopped green onions.
